This makes it possible for authenticated attackers, with Contributor-level access and above, to delete any schema metadata assigned to any post.

This makes it possible for authenticated attackers, with contributor-level access and above, to inject arbitrary web scripts in pages that will execute whenever a user accesses an injected page.

Deleting existing usermeta can cause a loss of access to the administrator dashboard for any registered users, including Administrators.
